Description
The name "Mater Matuta" derives from the ancient Italic goddess, the goddess of the dawn, protectress of new life and fertility. The worship of this deity was widespread in Central and was dedicated the famous temple of the ancient city of "Satricum" at Le Ferriere (Latina).

This territory, represented, compared to other areas of Lazio and other Italian regions, an environment to be explored from the wine standpoint.
For this reason in 1985 he gave life to the research and development project "Casale del Giglio", authorized by the Department of Agriculture of the Lazio Region.

The wine cultivation models that have inspired this research are those practiced in Bordeaux, Australia and California, which are territories exposed to the influence of the coast, exactly as the Pontine Marshes, which benefits from the influence of the Tyrrhenian Sea. Read more

Wine making | Vinification provides for two different techniques vines. Syrah is fermented with indigenous yeasts according to the hat technique submerged for a period of 18-20 days, during which occur periodical "délestage" especially in the early stages. Syrah so gives the Mater Matuta complexity and character, with sweet tannins and intense aromas of cherries and spices. For the Petit Verdot instead, vinification is done through the use of fullers that allow the maximum extraction of tannins and polyphenolic substances. The result is a large body of Petit Verdot and structure that is well suited for long aging. |
Aging | After careful racking, where the movement of the marc is only by gravity, the wines are put separately in new oak barrels for 22-24 months. A further refinement of 10 2 months in the bottle. |
