Description
It has been present in Trentino since the end of the 19th century, when it was introduced by the Istituto Agrario di San Michele all'Adige, coming from Burgundy, the home of Pinot and Chardonnay. Widespread in north-eastern Italy, it has found a second home in Trentino, where Bottega Vinai presents it in its traditional guise.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.

Story | Exclusively Pinot Grigio (Ruländer in German), a gem mutation of Pinot Noir, from which it derives. Medium-low unit yields with 70 hl/ha. The leaf is small and trilobate, with barely outlined lobes and U-shaped petiolar sinus; evident yellowish-brown veining and discolouration in autumn; bunch with peduncle resistant to detachment, small, cylindrical, very compact with berries that sometimes burst, becoming prey to Botrytis, typically grey-brown in colour, juicy and very sweet. |

Climate | The two areas differ in their origins: Roverè della Luna soils are fluvial-glacial while those in the Valle dei Laghi are alluvial. s range from Alpinecontinental in Roverè della Luna, where winters are severe with snow and summers are hot with cool nights, to the sub-Mediterranean type climate in the Valle dei Laghi, with mild winters and hot summers with ventilated evenings, due to the beneficial effect of the "Ora del Garda" breeze, which blows up from Lake Garda and helps keep the nights relatively cool. |

Wine making | Vinification is carried out off the skins and the must is obtained from a soft crushing of the whole bunches, to prevent the pink colour of the skins from being extracted. Selected yeast and a controlled temperature (20 °C) are used to aid fermentation. |
Aging | The wine is then fined in stainless steel vats for four months, after which it is bottled cold-sterile. |
