Pinot Noir is one of the most challenging and noble grape varieties at the same time. Difficult to cultivate because it is very delicate, and noble because it succeeds in producing wines of extreme elegance. Originally from Burgundy (France), where it is vinified in purity and undergoes long ageing in wood, in some areas of Friuli-Venezia Giulia it succeeds in obtaining excellent results. At Torre Rosazza, the vineyards closest to the winery are cultivated with Pinot Noir, in order to keep the quality of the grapes under constant control and produce an exemplary wine, one of the winery's Cru. |

釀造 |
Grapes are destemmed and placed in special wine-making vats in stainless steel. There, the must remains to macerate in contact with the skins for at least 5 days, at controlled temperatures. Once the skins are separated from the must, the alcoholic fermentation process is completed in steel vats. |
陳年 |
After the malolactic fermentation, the wine is placed in 300-liter durmast barrels where it is kept for nearly 2 years. |
匹配 |
It is an excellent wine with feathered game such as quail, pheasants, and ducks, but also with delicate meats such as goat, lamb with vegetables, veal, and chicken with peppers. |
