From the gentle pressing, to the temperature control at each stage of the fermentation process, to the maturation in small oak and steel barrels, and finally the separate vinification of each vineyard’s harvest all contribute to the creation of an authentic Franciacorta base wine with unique aromatic and sensory attributes. |
