釀造	Grapes are destemmed and gently crushed to respect the integrity of the berries. The grapes are gently pressed and the must obtained is decanted into steel vats. Spontaneous fermentation with indigenous yeasts at a controlled temperature of 16°C.
陳年	Before bottling, half of the wine rests in cement vats and the other half in steel for 12 months.
