收成	Harvested by hand, with two selections first in the vineyard and then on a selection table.
釀造	Partial destemming. The percentage of destemmed grapes is decided according to the vintage and the parcels. Fermentation from 20 to 30 days in stainless steel tanks at controlled temperature. Malolactic fermentation in vats. Clarification of the wines in the cellar during the winter.
陳年	18 months in 36-hectolitre Stockinger oak casks and 8-hectolitre terracotta vats. Bottling without filtering or filtration.
