The "Cappellaccio" expresses the full potential of Aglianico grown on the limestone hills of the Castel del Monte DOC area. Its important structure is softened by ageing in French oak for 12 months and balanced by the fresh acidity typical of the variety. Its elegant, harmonious and complex bouquet makes it suitable to accompany savoury meat dishes and aged cheeses. This wine should be served at cellar temperature.

釀造	Maceration lasts 12-14 days in stainless steel vats, with frequent pumping-over to obtain a better extraction of aromatic and colouring substances and, at the same time, soften the tannic structure.
陳年	Ageing lasts 12 months, half in French oak barriques of various ages and half in 50-hl Slavonian oak barrels, achieving great harmonicity without giving an excessive wood character. Before bottling, the wine undergoes no cold stabilisation. A further refinement of one year in the bottle allows all the characteristics of the variety to be expressed.
