Monte Rossa Franciacorta Salvadek Extra Brut 2016

It is made in the best vintages only from carefully selected grapes from the oldest and best exposed vineyards on the estate. It is made from 95 per cent Chardonnay grapes and 5 per cent reserve wine. The must is fermented partly in steel tanks and partly in oak barrels. The maturing on the lees lasts for over 30 months. This procedure produces a Franciacorta with a strong personality. To emphasise its biting character, it has been called Salvàdek: a Brescian dialect term meaning wild.

Bright gold colour crossed by fine and persistent bubbles.

Intense olfactory impact played on toasted almond and hazelnut, nougat, cake, candied citrus, dried fruit, canned peach, melon and subtle mineral notes.

Structured, fresh, elegant in its savoury character, balanced in its overall liveliness and long in its memories of pastry and minerals.

'Pezzogna' crazy water fish (a typical dish from the Amalfi coast: poached fillet of fish with tomatoes and chilli cooked in white wine and water)
