Wine-making soft crushing followed by draining. Grapes are not neither macerated nor pressed. First fermentation takes place for 10 days at a temperature of 15-18°C in steel tanks. Malolactic fermentation is inhibited. Second fermentation is in bottle at a cellar-temperature around 14 °C.
