味道

In the mouth, the weave of the fabric is very thick but rough, tannic, thick, with a very particular ribbed dimension, calling for food, for eating; the tension of the fabric is extreme, but in the end it is the power that wins: it is the bottom of the mouth that triumphs.

Pairing

Veal, fine poultry (roasted guinea fowl), beef tartar, game birds (pheasant), peppered and spicy dishes. Cheeses: comté, époisses, langres, munster, refined Dutch cheese.
