Vinified according to the ancient wine-making practice of "ripasso", therefore with a part of slightly dried Nebbiolo grapes, this wine does not bear the name of any of the Valtellina denominations. When Maroggia, Sassella, Grumello, Inferno and Valgella were established and at the same time its boundaries were established, the area of Tirano had no interest in being given its own sub-area. The reason was very simple: the private owners of the vineyards, who represented a supplementary income for them, sold all the grapes directly in Switzerland (just 2 km away) and the Swiss branded the wine exclusively as Veltliner (Valtellina). To the wine, obtained from Nebbiolo grapes fermented at the beginning of October, in about mid-November the slightly dried grapes of the "murache" (walls) are added to favour the resumption of alcoholic fermentation and the completion of malolactic transformation. |

Already in December, the wine, strengthened in structure and made more complex and intense, begins aging in oak barrels of 1500 liters and barriques. Aging then continues in the cool of the cellar, regularly monitored, for another 18-20 months, at the end of which the wine goes into the bottle where in another 6 months completes the "élevage" and perfects the bouquet. |
