Grapes are destemmed and crushed. Maceration on the skins for 8-12 hours followed by pressing. Cold decanting of the must for 12-24 hours. The fermentation occurs in barriques of several passages. Bâtonnage for 6 months. |

Racking, 6 months of ageing in steel vats, light filtration followed by bottling. |

It pairs well with vegetable soups, risottos, fish risotto, sushi, and veal with tuna sauce. It also pairs with typical dishes of Verona such as fish soups, risotto with hop buds, and Monte Veronese cheese. |
