Vin Santo “Occhio di Pernice” is a jewel born from the best Tuscan tradition. Once harvested, the grapes are typically hung in well-ventilated places and pressed only when they reach the right level of dryness.

顏色

A warm amber colour with copper reflexes.

香氣/花束

Early aromas of dryed apricots, raisin and dates open onto hints of caramel, hazelnut and almond that fade into walnut husk, honey and barley candy.

味道

Sweet and well-balanced, with a refreshing acidity and a long aftertaste.

Pairing

To be enjoyed with aged cheeses and dry pastries or with fresh cream gelato ice cream. It is excellent for a moment of meditation or while smoking a good cigar. Also to be tried with liver paté.
