The grapes are pressed whole without destemming, avoiding high pressure. Only the first and second presses are used for this cuvée. The juice is settled at 4°C for 36 hours. Fermentation lasts for 8 days at a temperature of 16°C, then fortification of the Muscat with a neutral alcohol. |

It pairs well with dishes, such as medium-cooked foie gras accompanied by thin slices of lightly toasted sourdough bread or a nice portion of smooth Roquefort. Also delicious with an assortment of ice creams and sorbets (melon, strawberry and menthol chocolate), lemon liqueur or a blanc-manger accompanied by wild blueberries. |
