釀造	Cold maceration for a few days to extract both fruit and spices from the skins before fermentation. The grapes are then destemmed and crushed. The fermentation was carried out at low temperature (16 °C) with wild yeast. After the fermentation, the lees were stirred for about 30 days to add body and complexity to the wine.
