The maceration of the grapes in red, which lasts about 4-5 days at a low temperature, allows the transfer of the colour and characteristic aromas present in the skins. This is followed by quick and frequent punching-down, racking, soft pressing, filtration and subsequent storage at 0°C. The second fermentation takes place in autoclaves in the Strevi wineries. |
