釀造	Grapes are selected by hand in the vineyards and are then transported to the winery in 15 kg crates. Grapes are not destemmed before entering a pneumatic press for low-pressure pressing. The wine is fermented and aged in 3 stainless steel vats, 2 used (year 2006) 500-litre French oak barrels and 1 used (year 2014) 450-litre French oak barrel (Dammy) without clarification. It ages for 9 months.
