Its origin is lost in the night of the times, being one of the oldest on the island. The first written testimonies are from 1696 to Cupani in 1696 and then to 1970, when Pastena describes four different varieties of Catarratto: the common or Latin Catarratto, the sparrow glossy cataract, the glossy cataract and the cataract polished or Extra glossy. |

Vinified in purity has a straw yellow color that tends to golden.
