Climate |
The vineyard has two different exposures to the sun. The north-eastern side gives the wine a good aromatic charge, whereas the south-eastern part gives structure and richness to the grapes and to the final product. |
Harvest |
Mid-September, when fully ripe, the grapes are hand-picked in the coolest hours of the morning. |
Vinification |
The grapes are immediately delivered to the wine factory and pressed. The must obtained is the first step for the production of Sauvignon Blanc by Villa Russiz. |
Ageing |
Fermentation and ageing take place in oak barrels, for a total of 18 months. After that, the wine is put into steel tanks, where it remains for at least 4 months, before being bottled. The wine is marketed after a bottle ageing period of about 8 months. |
