Harvest End of August - beginning of September.
Vinification After harvesting, the grapes undergo a short cold maceration lasting about 10 hours. This is followed by pressing and subsequent inoculation for alcoholic fermentation. At the end of fermentation, the wine is racked off and left to mature for a few months in steel tanks until frothing.
Ageing 4-5 months in autoclave with lysis on the lees for about 3 months.
