||By hand, early morning or late afternoon, in small boxes placed before arriving in the cellar, in cold storage. Mid-October.
||After de-stemming the grapes are conveyed to steel fermentation tanks, 100 hl, fitted with a replacement system programmable (to get maximum results for extraction of color and softness of the wine), and temperature control. The maceration lasts for about 20 days. After fermentation, the wine is poured into new oak barrels from various French tonnellerie craft for about 18 months.
