Vinification |
Crushing and destemming of the grapes, followed by maceration and fermentation at a controlled temperature of 22-26 °C for 10-15 days. Gentle pressing. |
Ageing |
In 5-10-hectolitre French oak for 8/12 months. |
Pairing |
Ideal with robust first courses, roast and grilled meats, game, and medium-aged cheeses, not fresh. |
