Vinification |
Grapes are gently handled before arriving at the winery. Light bleeding, maceration and fermentation in concrete vats, subdivided for the different plots, racking by gravity and subsequent ageing for one year in 20 hl oak barrels. |
Ageing |
The wine is bottled 18 months after the harvest. The wine is put on the market after a further 8 months of ageing in the bottle. |
