| Vinification |
After being hand-picked, the grapes are quickly brought to the winery, gently pressed at a maximum pressure of 1 bar, and immediately chilled to 16°C. The high quality must obtained is prepared for fermentation with selected yeasts at a temperature of 16-18°C for 15-18 days. |
| Ageing |
In temperature-controlled stainless steel tanks. |
| Pairing |
It pairs very well with octopus salad, shellfish and, in general, with dishes with intense flavours. |
