Soil of limestone, marl and clay. |
Harvest |
Hand picked at optimal ripeness. |
Vinification |
The grapes are taken to the cellar, gently pressed and fermented in individual tanks with small additions of yeast natives. Each vineyard has its own fermentation tank and is vinified separately. |
Ageing |
Once the fermentation is completed, usually after a couple of months, the wine is left to rest and then bottled within 11 months of the grape harvest. The bottles are then laid to rest for a couple of years before marketing. |
