| Harvest |
Hand picked grapes are harvested in small crates and dried for about 3-4 months in dry, well-ventilated rooms. |
| Vinification |
When they reach the ideal degree of drying, they are pressed and fermented in temperature-controlled steel tanks. Once fermentation has started, it continues for about 30 days to allow the full development of the high alcohol content of the wine. |
| Ageing |
After an initial evolution in cement - in order to allow malolactic fermentation to take place - refinement begins in medium and large oak casks for about 30 months. After bottling, the wine rests for at least 3 months in the bottle. |

It goes well with important dishes, red meats, game, spicy and mature cheeses. |
