Colour

It comes with a brilliant straw yellow color tinged with green and golden notes that increase in maturity.

Bouquet

Great intensity. Long and complex persistence rich and slightly honeyed fruity fragrances that anticipate bittering floral scents of the Mediterranean, creating an elegant synergy of scents.

Flavour

Dry but very soft. The warm embrace of its alcoholic strength does not suppress its precise freshness and blends harmoniously with the delicate scent of a tertiary masterful aging in barrels and precious steel.

Pairing

Its elegant and soft structure and convincing flavor to give it to suggest dishes of the navy, both traditional and modern cuisine. Sublimation occurs with pasta in white sauce of fish (risotto and spaghetti with clams) and of vegetables. Nothing else on the blue fish. Excellent is the marriage with white meat farmyard to young sheep, as well as in different elaborations truffles and foie gras.

Soil composition Very deep with the presence of prevalence of stone and sand and clay of the Plio-Pleistocene and Miocene, tending to limestone. Exposure and altitude: South-East, South-West and North-West to 300-350 m.

Vinification Harvest: late harvest grapes at the end of harvest and partly overripe with the development of noble rot.
