Vinification |
Fermentation takes place in steel tanks using natural yeasts. Initially, two pump-overs per day are carried out, which are later reduced depending on how the extraction proceeds. The same applies to the maceration time, estimated based on frequent tastings. After malolactic fermentation, which naturally takes place in November, the various vinifications are assembled and aged. |
Ageing |
12 months, part in 30-hl large oak casks, part in barriques of 3, 4 and 5 years. |
