A wine of excellence, obtained from organic grapes of Pecorino Docg Tullum.

Colour

Bright medium lemon yellow with golden hues.

Bouquet

Notes of pear, Golden apple, and almond with spicy nuances of sage and lavender.

Flavour

High acidity, balanced and well integrated into the fruit, full-bodied, consistent with long aromatic persistence and a slightly phenolic finish.

Harvest	Between late August and early September.
Production technique	At least 90% of Pecorino grapes are from certified organic vineyards grown on hilly soils in the town of Tollo.
Vinification	Cryomaceration of the crushed grapes, spontaneous fermentation of the organic grapes’ natural yeast flora, with maceration of the skins and subsequent fermentation in concrete tanks.
Ageing	On fine lees for about 6 months before being bottled without filtration or clarification.
Production year	13,000 bottles
Allergens	Contains sulphites
