Destemming and traditional maceration for 8 days at 28-30°C. |
Ageing |
A wise ageing blend, 'Passo delle Mule' is the result of a combination of wines that spend at least 10 months in very fine-grained oak wood and reds mellowed in vitrified concrete vats. After bottling, it ages 6 - 8 months in the cellar at a controlled temperature of 15-16°C to develop the bouquet. |
