Harvest	Harvest in the morning in the cool.
Vinification	No de-stemming or sulphiting during vatting, fermentation by indigenous yeasts, total vatting for 15 days, with very little punching down, no pumping over. Rapid pressing at low pressure.
Ageing	In new barrels (61%): Allier oak. Aged on lees until bottling. Blending with compressed air and gravity. Natural settling and degassing (1 month in stainless steel vats at 16°C). No filtration.
Total acidity	3.56 gr/L
Allergens	Contains sulphites
