Vinification |
After being harvested late, generally towards the end of October, the grapes are crushed and then left to cryo-macerate in the press for 10-12 hours, then gently crushed. Alcoholic fermentation occurs in stainless steel vats at a controlled temperature of about 13°C with lees ageing for around 30-35 days. |
Ageing |
The wine also remains in contact with its fine lees for about five months then, once bottled, it is placed in the bottle to rest before being marketed. |
Pairing |
This wine goes well with preparations with a strong aromatic and structural tone, such as traditional soups, pasta with poultry ragout, saucy fish preparations, white meats and medium-aged cheeses. It also combines with some cured meats, not particularly fatty but with a decisive aromatic tone, such as hams or copper. A perfect marriage between food and wine. |
