Ciavolich Aries Pecorino 2021
We have produced only one Pecorino since 2003 thanks to one hectare of pergola planted by my father in 2000.

Colour

Bright, straw yellow.

Bouquet

Wide nose with hints of medlar, peach, bergamot, freesia, chamomile flowers, thyme, rosemary, white pepper, ginger, balsamic notes.

Flavour

On the palate it is of enveloping softness and intense freshness, pulpy and sapid, structured and balanced, consistent with the sense of smell; final citrus with sapid trail of long persistence.

Pairing

In Spring it matches well with pasta and asparagus, broad beans and peas, sprinkled with pecorino cheese. From Autumn it’s perfect with mushroom dishes and with baked cheese toasties.
