Harvest Grapes are harvested ripe in small 20 kg perforated crates, with the bunches being rigorously sorted.
Vinification Grapes are brought to the cellar and pressing takes place within a few hours of harvesting. Fermentation is carried out at a controlled temperature of around 28°C with repeated gentle pumping over. Maceration of the marc is long, on average 150 hours. Finally, the new wine is stored in large barrels where the subsequent spontaneous malolactic fermentation takes place.
Ageing 12-24 months in large oak casks.
