Harvest	Grapes which are harvested by hand at the end of September.
Fermentation temperature	28 °C
Production technique	The production, which is quite reduced after the winter pruning, is furtherly decreased in August after we have done a manual pruning in order to enhance the grapes quality.
Vinification	Fermentation is made in special wine steel tanks, with no selected yeasts, at about 28 °C temperatures for 14 days.
Ageing	Afterwards, there is the malolactic fermentation in steel tanks, without any bacterial inoculation.
