Bouquet

To the nose it is opened clearly in a floral bouquet with typical notes of sambuco, pear, in order then to evolve itself on scents sweeter than it yields to yellow paste like apricot, pineapple and melon.

Flavour

In mouth it is soft, it reproposes the taste of the fruits already perceived to the nose with long notes sapide and that of it exalt the elevated structure.

Origin The Gentle “Sereole” is a selection of coming grapes from the classic zone of the Gentle one in the Monteforte and Soave municipalities d' Alpone
Soil composition The lands, of lavico origin - basaltic, they are placed in hill
Cultivation system To veronese bower with a density of 3.000 stocks for hectare and to espalier with 5.000 stocks for hectare

Harvest The collection of the grapes happens from the half of October when the same ones are very mature and rich of aromatic substances.
Fermentation temperature The temperature of 7°C and the fermentation in vats of french rovere with 75 hl of capacity around the 16°C
Fermentation period To the diraspatura it follows a soft tamping with partial contact of the peels to cold.
Ageing The maturation happens on always leavens of fine fermentation in the wood vats, for approximately six months.
