Soil composition |
The surface layer of the soil is rich in organic substances, silt and sand of a yellowish brown colour with black shades. Below 75 centimetres we find yellow sandy clay and then fine silty sand, rich in mineral salts dissolved by overlying levels during the process of soil formation over the last 10,000 years. |
Vinification |
In white with soft pressing. Primary fermentation: static decantation and fermentation at controlled temperature. |
Ageing |
Secondary fermentation: 30-40 days. Ageing: 1-3 months. Re-fermentation in large containers "Metodo Charmat". |
Pairing |
Suitable for desserts without creams, perfect for offering sweet scenarios to demanding meditations. |
