De ce vignoble
Simonsig Wine Estate est synonyme de l'histoire de l'industrie viticole sud-africaine, de la région viticole de Stellenbosch et du nom de la famille Malan. Ces éléments sont étroitement liés dans ce domaine viticole familial, où feu Frans Malan a produit la première bouteille de notre bien-aimé Kaapse Vonkel, la première Méthode Cap Classique d'Afrique du Sud élaborée dans le style classique de la fermentation en bouteille. On lui attribue également la cofondation de la florissante route des vins de Stellenbosch, une première à l'époque. Aujourd'hui, son héritage est perpétué par ses enfants, François et Johan, et ses petits-enfants, François-Jacques, Christelle et Michael, les deuxième et troisième générations Malan du domaine viticole de Simonsig.

| Récolte | Careful vineyard sorting ensured that only the highest quality grapes reached the cellar. Following a gentle destemming, the grapes must underwent a two-day cold soak before being inoculated with a carefully selected yeast strain. |
| Vinification | Throughout fermentation, pump overs were carried out 2 to 4 times daily, adjusted based on the fermentation rate and stage. The wine spent 13 to 22 days on its skins before undergoing a gentle pressing into tanks. |
