Indian summer, known in English as Estate di San Martino, is that period of good weather that usually arrives after the first cold spells of autumn. This is the time when chlorophyll gives way to anthocyanin, the pigment that colours the leaves in warm autumn hues. It takes a little patience to witness this metamorphosis, just as it takes patience to enjoy a Conegliano Valdobbiadene Dry, because the grapes used to make this sparkling wine are harvested later, to allow them to reach the right concentration and sugar residue.
