Description

What kind of wine it is

Nottefonda by Rocca Sveva is a red wine with an enveloping character, representing the Rosso Veronese. Created from a blend of Corvina, Merlot and Pinot Noir, this certified vegan wine appears in the glass with a deep ruby red colour. On the nose, it releases a complex bouquet, characterised by aromas of small black fruits, dog rose, spices and rhubarb. On the palate, it is full-bodied and well balanced, with a rounded profile recalling notes of blueberry and blackcurrant jam. The sip finishes with a slightly sweet and harmonious finish, ideal for accompanying meat dishes and cheese boards.

Where it comes from

This wine is born in the heart of Veneto, in the renowned Soave area, in the province of Verona. The Rosso Veronese reflects a clear territorial vocation, enhanced by a blend that harmoniously combines local and international varieties. Corvina, alongside Merlot and Pinot Noir, gives the wine a remarkable aromatic concentration. The geographical context and careful varietal selection make it possible to obtain a red of substance, capable of expressing the characteristics of the Venetian territory through a soft structure and persistent aromatic profile.

How it is produced

Production begins in the vineyard with the over-ripening of the grapes on the vine for ten to fifteen days. The bunches are then carefully dried on racks for at least ten days, thus increasing the richness and complexity of the must. After pressing, vinification continues in stainless steel tanks at a controlled temperature. Ageing continues in steel and is completed with a brief period in oak barrels, which gives the wine roundness and structural harmony. This technique results in a full-bodied sip, best served at a temperature between sixteen and eighteen degrees.
