Description

What kind of wine is it

Pierre Paillard Champagne Grand Cru Verzenay Pinot Noir Extra Brut Vieilles Vignes is a Blanc de Noirs made exclusively from Pinot Noir grapes. Produced using the Traditional Method, this Champagne displays a straw yellow colour and a fine perlage. On the nose, it offers clear aromas of red fruits accompanied by hints of yeast. On the palate, it is dry, harmonious and boasts excellent acidity. The elegance of this Extra Brut Champagne pairs perfectly with starters, lean fish, cheeses and white meats.

Where does it come from

It comes from Verzenay, in the Montagne de Reims, an area of Champagne classified as Grand Cru. The grapes come from old vines over forty years old, cultivated by Pierre Paillard using organic and sustainable methods. The chalky soil imparts marked precision and energy to the glass. The excellence and rigour of this estate's viticulture have earned widespread praise and significant international recognition, including prestigious accolades from James Suckling.

How is it produced

The entire production strictly follows the Traditional Method. The wine initially matures for ten months in barrels, gaining depth and structure. It then spends a further 48 months on the lees, within the historic chalk cellars, enhancing its aromatic profile. The minimal dosage defines its Extra Brut character, delivering a sip of extraordinary acidic tension, savouriness and persistence, enlivened by a tactile and elegant effervescence.

History and Curiosities

Originating from the prestigious Grand Cru of Verzenay, this exceptional Champagne Blanc de Noirs showcases the expertise of the eighth generation of the Paillard family. The result of organic viticulture, it is made entirely from Pinot Noir grapes from old vines over forty years old, with an exclusive production of only 2,266 bottles. The character of this Extra Brut is shaped by ten months of maturation in barrel and 48 months of ageing on the lees in the historic chalk cellars. A true masterpiece, awarded 95 points by James Suckling.

This Extra Brut Champagne enhances seafood cuisine, naturally complementing starters and dishes based on lean fish. Thanks to the excellent acidity and the fine, persistent perlage of Pinot Noir, it perfectly balances the savouriness of cheeses and the delicate flavour of poultry and veal. An ideal glass to accompany the entire meal or to elevate a refined aperitif.
