Organic Barolo DOCG, 14.5% ABV, produced by Casa E. di Mirafiore, a historic winery founded in 1878. 0.75 L bottle, 2019 vintage. A Barolo made in the Lazzarito cru, one of the most important in Serralunga d'Alba, where the calcareous marl gives the Nebbiolo an imposing structure and unparalleled elegance. The destemmed and crushed grapes are heated to around 32-33°C and pumped over simultaneously. During the first few days, the number and frequency of pumping over is very high to optimize the extraction of tannins and color. Aged for two years in medium and large oak barrels (from 2,000 to 14,000 liters). The bouquet is rich, with distinct hints of ripe plum, tobacco, dried mushrooms, mint, rosemary, and cinnamon. Ruby red color with garnet highlights. On the palate, it presents a very dense and dense texture of tannins that give the wine a sensation of compactness, but also of softness and harmony. A perfect wine to accompany red meats, game, and aged cheeses.

Since 1878, Casa E. Di Mirafiore has been overlooking this UNESCO world heritage landscape with his estates in Barolo and Serralunga, the heart of one of the world's most famous wines: Barolo. It is also thanks to Casa E. Di Mirafiore that the world is aware of Barolo. It is in fact the first winery to export Barolo worldwide.
This estate is synonymous with quality, as it is home to two of the best Cru vineyards in the Langhe: Lazzarito (on one of Serralunga d'Alba's most magnificent slopes) and Paiagallo.
In this town, Serralunga d'Alba, tradition is never forgotten. Even today, the style of Casa E. Mirafiore is defined by fermentation in concrete tanks and enormous Slavonian oak barrels for ageing. Read more

| Wine making | The destemmed and crushed grapes are heated to around 32-33°C, and at the same time pumping over is carried out. During the first few days the number and frequency of pumping over is very high to optimise the extraction of tannins and colour. As the alcohol content increases, both the temperature (up to 25° C) and the number of pump-overs are reduced. During fermentation, delastages are carried out to optimise and improve polyphenol extraction and at the same time to oxygenate the yeast, which ferments under ideal conditions to produce sharper and more elegant aromas and flavours. This is followed by the wine's stay on the skins at "submerged cap" for a further 40-45 days during which tertiary aromas are obtained that give complexity and elegance. Once this phase is over, malolactic fermentation takes place, which is favoured by keeping the wine at a temperature of around 20° C in cement containers. |
