Description
The Cuvée n.7 is the most contemporary Franciacorta among the Sparviere wines. The cuvée n.7 embodies the territorial identity of the Sparrowhawk and the peculiarities of our terroir, expertly interpreted by the work of the oenologist Francesco Polastri. Born in 2014 from a selection of 10 cuvées created using different percentages of wines from individual vineyards, the cuvée identified with the number 7 proved to have the perfect stylistic figure to describe our territory. Hence the name “Cuvée n.7“. A Franciacorta 100% Chardonnay that conquers for its freshness.

Lo Sparviere is housed in an old country residence dating back to the 16th century. At its helm is Mrs Monique Poncelet Gussalli Beretta, a determined woman who strongly wanted to recover the history and charm of this ancient corner of Franciacorta.
Mrs Monique inherited her passion for the land and the vineyard from her father-in-law, the lawyer Franco Gussalli, whose family had conducted numerous agricultural activities in Franciacorta for generations. These included the production of small quantities of wine initially intended for friends and family.
That same passion was picked up and kept alive over time by expanding and developing the wine business. Today, the estate covers more than 60 hectares, 30 of which are planted with Chardonnay and Pinot Noir, all of which have been organically farmed since 2013. Read more

Wine making | The small crates of Chardonnay are left for 24-36 hours in a refrigerating room with a temperature of 4 °C, cooling the grapes to 10 °C to improve varietal aroma extraction. The chilled grapes are taken to the press for a gentle, whole-cluster pressing, extracting no more than 60% of the freerun must. Fermentation is carried out slowly at 15 7 °C to preserve varietal aromas. The base wine ages sur lie for about 7 months in stainless steel tanks and bottling for tirage follows in May |
