Where it comes from

It originates in France, in the heart of northern Burgundy. The vineyards stretch along the banks of the River Serein, where they benefit from a cool climate that promotes pronounced aromatic precision. The vine roots delve into Kimmeridgian limestone soils, composed of marl, clay and precious fossilised oyster shells. This unique geological matrix imparts its unmistakable gustatory tension to the glass, ensuring extreme purity and the distinct mineral imprint typical of Chablis.

How it is produced

The grapes are hand-picked to preserve their integrity, then undergo a gentle pneumatic pressing. Fermentation takes place partly at low temperature in stainless steel, in order to maintain the fruit's definition. A smaller portion matures in oak barrels, giving the wine structure and complexity. Afterwards, the blend rests for ten months on fine lees with the bâtonnage technique. This meticulous ageing enriches the roundness on the palate, resulting in a linear wine with long persistence.
