Description

Praepositus Sauvignon is an excellent wine with a Controlled Designation of Origin (DOC). Produced in Alto Adige from a white grape variety that is very popular in France, where it is the main component of some of the most prestigious wines in the world. The Praepositus Sauvignon from the Abbazia di Novacella winery is the fruit of a 100% Sauvignon Blanc blend. A highly prized wine produced in vineyards located in the Isarco Valley, more precisely in the Bressanone and Varna area, on sunny slopes at an altitude ranging between 600 and 900 meters above sea level. The area, characterized by a cool microclimate with frequent temperature variations, has soils that are rich in minerals. Climate and soil composition are the two components that allow the wine's flavor and aromas to develop optimally. The grapes, harvested around mid-September, are meticulously selected and pressed. After pressing, they undergo a fermentation process, during which the grapes are fermented in stainless steel tanks at a controlled temperature of 20°C. After fermentation, the wine is left to mature in the same tanks for a minimum of 6 months. Once the entire vinification process is complete, the Sauvignon is bottled and then released onto the market. The product on the market is a white wine, an expression of the best vineyards in Alto Adige. An excellent Sauvignon for a wine product that expresses refinement and elegance of taste, highly appreciated both in Italy and internationally.

Novacella is the Northernmost wine-growing area in Italy. On the sunniest slopes surrounding the Abbey, fine vines have been producing white grapes for 8 centuries, which are vinified in the monastery cellar.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.

A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.

In our wine cellar, the grapes from these three vineyards are raised to wines whose distinct character and quality has been rewarded by the loyalty of generations of friends and connoisseurs.
