Still red Veneto IGT, 15% ABV, produced by Zyme. A blend of Cabernet Franc, Cabernet Sauvignon, Chardonnay, Corvina, Corvinone, Croatina, Garganega, Marzemino, Merlot, Oseleta, Rondinella, Sangiovese, Sauvignon, Syrah, Teroldego, and Trebbiano Toscano. 0.75L bottle, 2016 vintage. A wine that is a veritable kaleidoscope of aromas, a tribute to the complexity and richness of the Verona region. The grapes are pressed together without destemming, fermenting in concrete vats with indigenous yeast for approximately 30 days. This is followed by a dual aging process for a total of 30 months using new 225-liter (200%) French oak barriques, without racking. The wine is bottled without fining and undergoes further bottle aging for at least 2 years. A blend of fruit, flowers, and minerals alternating with a sense of well-defined volume and detail. A brilliant ruby red color with garnet highlights as it ages, with good intensity. A sensation of enveloping richness and complexity, with fruit, spices, and superior alcohols alternating with flavors of fruit jam and undergrowth, followed by tobacco, cinnamon, nutmeg, and cloves, combined with minerality, enhance the depth of the assemblage. It finishes with persistence and a mellow sweetness.

Re-establishing an ideal habitat where people and nature are in perfect symbiosis is, in fact, the idea of a new humanism of the earth, of which Celestino Gaspari and Zýme are promoters.
This new idea has the purpose of establishing a new relationship between the environment and people as the natural guardian of their local corner of the earth. People are those who protect the environment, but also the ones who can renew it, and reinterpret it.
Ecosustainability to vineyard management practices, transparency of the final product through the understanding of its production processes, and respect for the rhythms of nature are the principles of Zýmeās approach to winemaking.
This approach stands for a simple style of living in harmony with the earth, in a historical moment in which people, bewildered by the opulence of fake well-being, have put at risk their own survival.
Tradition and innovation are the two complementary features of Zýmeās wine production. The respect for, and attention to the historic wines of the Valpolicella area accompany innovation and experimentation with new wines that will enhance and renew the local background. | Wine making | The whole clusters are crushed without destemming, and the grapes ferment in concrete vats with ambient yeasts for about 30 days. Pump-overs and dƩlestages follow the vinification.
