Champagne Blanc de Noirs Brut Nature La Pucelle by Thomas Perseval stands out for its pure and defined character, the result of a blend of Pinot Meunier and Pinot Noir grapes. Produced using the Traditional Method, it displays a bright straw yellow colour enriched by a fine and persistent perlage. The aromatic profile reveals delicate and elegant fruity notes. On the palate, it is linear, precise and of medium intensity, enhanced by the total absence of dosage, which offers a clear, unadulterated sip deeply connected to its terroir of origin.
Where it comes from
This wine originates in Chamery, in the Montagne de Reims in Champagne, from vineyards covering two hectares. These rows form a natural amphitheatre around the village, ensuring various sun exposures. The soil is characterised by a complex geological matrix of sandy silt, sandy clay and calcareous clay. The agronomic management follows strict organic and sustainable practices, with manual work, the use of natural herbal teas and grassing between the rows to ensure proper soil aeration.
How it is produced
In the cellar, a philosophy of minimal intervention is adopted to enhance the spontaneous expression of the grapes. The process begins with the separate vinification of six plots, respecting the identity of each individual soil. Part of the base wine matures in oak barrels for eight months before starting the secondary fermentation in the bottle according to the Traditional Method. The subsequent ageing on the lees gives depth and impeccable balance to the structure, ensuring a wine of great clarity and extraordinary aromatic definition.

Thomas Perseval signs the vintage La Pucelle 2019 in Chamery, on the Montagne de Reims, produced from a magnificent two-hectare vineyard amphitheatre. Faithful to a rigorous organic viticulture, the estate favours a sustainable approach to enhance the purest expression of the fruit. This cuvée is born from six different plots and matures according to the traditional method, with a period on the lees and partial ageing in oak barrels. An authentic oenological creation which, thanks to the use of minimal sulphites, faithfully reflects the richness of the clay-limestone soil.

For generations, the company has been cultivating cereals and 2.5 hectares of vineyards. The cultivated grapes are mainly Pinot Noir, Pinot Meunier, Chardonnay and in small part older rarer varieties (petit Meslier, arbanne and pinot bianco); these give complexity and authenticity to the cuvee of the Domaine. The six parcels located in the middle and lower part of the hill on sandy loamy soils, sandy clays and limestone clay make it possible to create expressive wines with parcellaire vinification. The operations are all manual. Herbal teas are applied on the vineyards, sowing of plants among the rows that allow to air the ground. In the cellar the operations are limited to give the optimal quality and aromatic taste.
To improve the quality and give a greater aromatic power, the wines rest on the yeasts and in oak barrels for eight months, the interventions are minimal and the use of reduced sulphites. In the 80s, Thomas's parents created the Perseval Harteel brand, they left the cooperative and with the use of a traditional press they began their production independently, favoring quality.
At the end of the 90s Thomas after a period of internship with a biodynamic wine producer in Burgundy is aware of the need to let the fruit freely express its characteristics The choice to switch to organic represents its concept of agriculture and its vision of the future.
