Produced according to the Champenoise Method, it displays a bright straw yellow colour and a persistent perlage. The bouquet offers distinct hints of almond and notes of ripe fruit such as pear and apple. On the palate, this Brut Champagne reveals a broad, vinous structure, finishing with a soft and elegant aftertaste. Best served between 6 and 8°C, it pairs beautifully with fish dishes, shellfish and pasta, and also serves as an excellent base for refined cocktails.
Where it comes from
This cuvée faithfully reflects the Champagne region, originating from vineyards located in the renowned Côte des Blancs, specifically in Le Mesnil-sur-Oger. The vineyards are set on a distinctive clay-limestone soil, a geological matrix essential for imparting a measured style and typical aromatic finesse to the wine. Under the guidance of oenologist Pierre Gonet, the Philippe Gonet house has been operating since 1783, enhancing the unique characteristics of the region and ensuring a faithful and structured expression.
How it is produced
Production begins with six months of ageing in stainless steel tanks at controlled temperature. This is followed by the second fermentation in the bottle, as required by the Traditional Method. Maturation continues for three years on the lees, a period that enriches the wine's texture and ensures the integration of the bubbles. With a sugar dosage of 8.0 g/L, the result is a balanced and rigorous drink, supported by excellent ageing potential.
