Pallini Romana Sambuca is an excellent sambuca produced in Lazio by the Roman company Pallini. Its uniqueness lies in the fact that it is the only distillery located in Rome. It was founded way back in 1875 by Nicola Pallini, but only in the 1920s did it move to Roman soil, settling in the capital and producing highly prized liqueurs, including Sambuca, appreciated throughout the world. Sambuca is a liqueur derived from a blend of ingredients including elderberry (from which it takes its name) and anise (the company uses both the green and star varieties), with the occasional addition of other herbs. The origins of sambuca are commonly attributed to the Carthusian monks and perhaps its initial use was for medicinal purposes. In Italy, it became enormously popular, especially during the 19th century. Pallini Romana Sambuca is produced through the distillation of green anise and star anise, which contributes to giving this liqueur its unmistakable flavor and intense aroma. After adding elderberry extract, the distillate undergoes maceration and is then sweetened. Today, sambuca can be used in various recipes and preparations, drunk neat or as an addition to other beverages, including coffee. The aniseed aroma, so intense and immediately perceptible even to the nose, is precisely what makes this liqueur recognizable and highly appreciated by critics and consumers around the world.
