Production process

The process begins with a 48-hour natural fermentation of fresh juice using a proprietary yeast strain. The wash undergoes distillation in a Savalle copper column still to concentrate clean, aromatic congeners. Maturation lasts twenty months in new white oak casks featuring the exclusive Toast Profile No. 105. This targeted ageing method builds structure, adding warming vanilla and pepper notes while preserving the original freshness.

On the palate it is complex, smooth and harmonious, with rich roundness and a savoury, melting feel. Flavours of fresh sugarcane, vanilla, ripe yellow fruit (apricot) and tropical fruit, candied citrus peel, sweet spices with cinnamon and nutmeg, plus herbal/vegetal accents and a slight bitter liquorice note, with oak woodiness. Fresh, long and persistent finish, well balanced, warming, with spice and pepper.

Neisson is a distillery in Martinique, in the municipality of Le Carbet. The owner Gregory Vernant Neisson is now the last master distiller to own the island. Neisson also owns the sugar cane that he uses to produce Rhum Agricole.

It grows 3 types of non-hybrid cane: the malanoi, the rubanée and the cristalline, which have been included, after a long struggle, among the barrels allowed in the AOC of Rhum Agricole della Martinique. The fermentation of the pure sugar cane juice takes about 72 hours, one of the longest of all the French Antilles, developing a unique aromatic complexity.
